Ingredients: Sweet Potato, Green Capsicum, Potato, Carrot & Peeled Garlic

Use a lined baking tray. Spread the vegetables evenly across the tray and drizzle some olive oil, salt and dried herbs / chili flakes (if you'd like). Roast them in a pre-heated oven between 140-180 degrees Centigrade for anywhere between 20-25 mins depending on how well you would like them roasted.

Serving Suggestion: Remove them into a serving platter lined with our naturoponic lettuce as a base or else serve it alongside a protein of your choice.

Roast Veg Assortment Regular Medley

Ingredients: Sweet Potato, Potato, Carrot, Green Capsicum & Garlic

Wash the potatoes thoroughly if you'd like to roast them with their skin (preferred) or else peel the potatoes along with the carrot. Deseed the capsicum and separate the pods of garlic leaving their skin intact (preferred) or else you can peel the garlic too. Cut the vegetables into batons - about 2 inches long an half an inch thick.

Vegetable Au Gratin Mix

Ingredients: Cauliflower, Carrot, Onion, Potato & Garlic

Blanche the cauliflower and par-boil the potatoes and carrots. Heat some oil, sauté the garlic and onions and then add the carrots, potatoes and cauliflower. Season to your liking.


Béchamel Sauce - Use 50gm of butter, melt it and add 50gm of refined flour and mix well into a roux. Add 500ml of milk (you can mix this with water in a 60:40 ratio) slowly to the roux and keep whisking till all the milk is added and the sauce is thickened.

Place the veggies in a baking dish and cover the veggies with the sauce. Add grated cheese to the top and bake at 150 degrees centigrade till the cheese melts and browns over.

Ratatouille Mix

Ingredients: Brinjal, Tomato, Carrot, Onion & Garlic

Heat some olive oil, sauté the garlic, then add the onions, carrots, brinjal and the the tomatoes (in this order, a minute part to allow for even cooking) and add water. Season to taste. You can also add chopped zucchini and bell peppers if you wish.

You can enhance the flavour by adding thyme and some bay leaf. The bay leaf can be added while sauteing the onions and the thyme can be added at the end.
