Capsicum is a kind of pepper that comes in three colours – red, green and yellow. They are all essentially just green capsicums that have been allowed to ripen for different time lengths. The Greens are harvested the earliest, the red for the longest and the yellow in the middle. The yellow capsicum has a fruity taste that is milder than the others and is hence used in grilled and roasted pan Asian & continental dishes to give a mild and fruity aftertaste. Ruby-red capsicums add a sweet and slightly tangy twist to the dishes.       Store unwashed in refrigerator.
