Also known as Enokitake, Velvet foot or Lily mushrooms, Enoki mushrooms are prized in Asian cuisine. They are crisp and crunchy with a mild flavour. The wild enokis are slightly sticky, rubbery and have an earthy flavour. They are suitable for raw use and in cooking applications such as simmering, blanching and boiling. They are great in salads, or to be sauteed into noodle bowls or fried rice dishes. Store in refrigerator.
