Description
Mangalore variety Ivy Gourd or Tindora are small fruit with smooth skin with light green stripes and underneath that lies translucent white flesh which is aqueous and crisp. The fruit are juicy and crunchy with a slightly bitter aftertaste. As it matures the fruit becomes bright red and becomes sweet. Tindora is eaten raw as a salad and it is more popularly cooked and added to curries, stir fries and used as a main ingredient in Indian pickles and Chutneys. Store in a paper bag in refrigerator.
